Dishes include cured amberjack, raw Rossi prawns from Malta’s south coast, truffle-stuffed guinea hen and the restaurant’s signature truffle pudding.Every course is finished and plated in front of guests, with chefs sharing the inspiration and techniques behind each dish throughout the journey.
