A friend and I talked to a young man who worked in the kitchen of the restaurant whose cantina we were at, and he had a brushed aluminum briefcase full of knives. He told us he was in culinary school in San Francisco (relatively local to where we lived) and he had everything in that briefcase from cleavers to paring knives, all extremely sharp.
