Disney Springs is no stranger to change.Over the years, guests have watched restaurants close, stores relocate, and entire sections of the shopping and dining district evolve into something new. Most of the time, those changes happen gradually enough that casual visitors barely notice. From longtime food options disappearing entirely to a nearly 30-year-old staple preparing to leave its original location, guests will encounter a noticeably different experience during upcoming visits.Here’s what Disney has confirmed so far.Three Disney Springs Food Trucks Have Officially DisappearedThe biggest immediate change comes from the West Side, as we’ve reported.As of June 7, Disney Springs officially lost all three food trucks that had operated in Exposition Park for more than a decade. Disney has removed the trucks entirely, ending a dining option that many guests relied on for quick, affordable meals.The closures include:Cilantro Urban Eatery4 Rivers Cantina Barbacoa Food TruckGoJuiceThe removals happened in stages. Cilantro Urban Eatery disappeared first, while 4 Rivers Cantina Barbacoa and GoJuice served their final guests on June 7.Each truck filled a different niche. Cilantro offered Latin American favorites, including Cuban sandwiches and arepas. 4 Rivers became known for items like its Taco Cone and Mexican-inspired menu. GoJuice specialized in smoothies and refreshing beverages that were especially popular during Florida’s hottest months.Today, the former food truck area has been converted into additional seating space. Disney has not announced any replacement concepts for the location.For guests who appreciated grabbing a quick meal without committing to a full-service restaurant, the closures leave a noticeable gap on the West Side.Marketplace Co-Op Is Partially ClosedThe fourth impacted location isn’t completely gone, but it is no longer operating at full capacity.Over in the Marketplace section of Disney Springs, Marketplace Co-Op is currently undergoing a significant interior refurbishment. Large construction curtains now block off a substantial portion of the store, preventing guests from accessing parts of the shopping floor.Disney has not revealed exactly what is being built behind the walls.The remainder of Marketplace Co-Op remains open, including surrounding merchandise areas and nearby shopping spaces. However, visitors expecting the full experience will quickly notice that a sizable section of the store is unavailable.Because Disney has not released a timeline or details regarding the project, guests can only speculate about what changes may eventually emerge from the refurbishment.Still, the temporary reduction in shopping space means Marketplace Co-Op joins the growing list of Disney Springs locations currently affected by construction.Credit: DisneyGhirardelli Is Leaving Its Original HomeThe fifth major change may be the most emotional for longtime Disney Springs fans.After operating from the same Marketplace location since 1996, Ghirardelli Soda Fountain & Chocolate Shop has confirmed plans to temporarily vacate its longtime home later this summer for a major renovation project.For nearly three decades, Ghirardelli has been one of the constants at Disney Springs.Guests have made traditions out of stopping for sundaes, grabbing shakes, collecting complimentary chocolate squares, or simply using the storefront as a meeting point while exploring Disney Springs. Through countless renovations and the transformation from Downtown Disney into Disney Springs, Ghirardelli remained in the same location.That is about to change.Disney has confirmed the location will temporarily relocate to Town Center while renovations take place at the Marketplace storefront. However, Disney has not announced an exact moving date. The relocation is expected sometime later this summer.A Major Renovation Is PlannedFortunately for chocolate lovers, Ghirardelli is not leaving Disney Springs permanently.According to Disney and Ghirardelli, the Marketplace location is scheduled to receive a major overhaul that will include expanded indoor seating, operational improvements designed to reduce wait times, and additional enhancements that have not yet been announced publicly.The renovated location is expected to reopen in spring 2027.Until then, guests will need to adjust to the temporary Town Center location.While the move may seem minor on paper, it represents a significant change for regular visitors who have spent years incorporating Ghirardelli into their Disney Springs routines.Credit: SJ Grant, FlickrDisney Springs Is Entering Another Transition PeriodTaken individually, each of these changes may not seem dramatic.But when viewed together, the picture becomes much clearer.Disney Springs has now lost three longtime food trucks, a significant portion of Marketplace Co-Op is inaccessible, and one of its most recognizable dining destinations is preparing to leave its original location after nearly 30 years.At the same time, Disney continues bringing new concepts into the district.
