I’m not overweight and don’t have diabetes, but some veg does actually make me throw up, or comes out the other end completely undigested after terrible literally in a ball on the floor in pain for hours… idk if it’s the histamine content of the veg, an allergy, or what- but I’m pretty limited to potatoes, onion, mushrooms, carrot, hummus, refried beans, and puree tomato. Maybe she needs veg puréed, and add some protein powder to help with feeling full- carrot is actually pretty sweet to help with the less tasty flavors- but a little bit of honey would be offset with the actual veg
